AJIACO BOGOTANO (SANTAFEREÑO)
Each region of Colombia has a typical disches, for example in the capital of the country Bogotá, the Ajiaco Santafereño is a delicious soup
There are differents ways to make this soup but it´s usually made with chicken and three kinds of potatoes: Pastusa, Criolla, and sabanera; corn and an herb called Guascas. This herb gives the soup a wonderful flavor.
You can serve it with avocado and white rice, capers and heavy cream.
Ingredients
- Chicken
- Potatoes, three kinds: Criolla, Pastusa, Sabanera
- Corn
- Guascas
- Salt
- Pepper
- Onion
- Garlic
- Chicken Bouillon
- Coriander
Accompaniment:
- White rice
- Avocado
- heavy cream
- Carpers
Preparation
- In a pot add the chicken, corn, garlic, chicken bouilon, coriander, salt and pepper
- After add water and put to boil, then reduce heat to medium and cook for about 35 to 40 minutes, until the chicken is cooked and tender. Remove cthe chicken and reserve.
- Cooking the corn for 30 minutes more and add rhe criolla potatoes and the guascas , cook to 30 minutes.
- Uncover the pot and add the criolla potatoe and simmer for 10 to 15 minutes flavour with salt and pepper.
- Finally cut the chicken meat into small pieces and put on the pot again and serve the Ajiaco hot with capers, heavy cream, an alice of avocado and white rice.
